6 large eggs
1/4 cup mayonnaise
1 tsp Dijon mustard
1 tsp apple cider vinegar
1/4 tsp salt
1/4 tsp black pepper
1/4 tsp paprika
Set the EGG for indirect cooking at 250°F/121°C.
Place eggs in a pan with water and bring to a boil. Let boil for 10 minutes.
Transfer eggs to an ice bath and let cool for 5 minutes.
Peel eggs, cut in half, and remove yolks.
In a bowl, mix yolks, mayo, mustard, vinegar, salt, and pepper.
Pipe mixture back into egg whites.
Smoke eggs on the EGG for 15 minutes.
Garnish with paprika and chives before serving.
